Rob and I picked up a new item at Costco last week:
Just look at all the protein in these babies!
I love black beans, so I’m very curious about these. They have great reviews, too! Of course, a Mexican-style dish makes the most sense to me. A red curry sauce is also suggested on their website. I’ll try that when I’m cooking just for me. But I am also considered making a light garlic cream sauce and just adding some veggies. I’m planning to try this “pasta” out next week. How would you use these?

- Monday – Zoodles cut this way with Meat Sauce in this Six-Minute Marinara, only I’m substituting San Marzano tomatoes
- Tuesday – Creole Mustard Pork Chops with Shredded Parmesan Brussels Sprouts or this Apples & Brussesls Sprouts Slaw
- Wednesday – Leftovers
- Thursday – Something with chicken for me. I haven’t decided yet! Suggestions?
- Friday – Dinner at Mattie’s – What looks good to you here?
- Saturday – Dinner out with The Girls
- Sunday – TBD – Packer game at noon! I want to bring something on the healthier side.
Lunch:
- Leftovers
- Snacks – apples, nuts or string cheese and dark chocolate

Hmm those noodles look really interesting! I’ve never cooked anything like that before so I’m not sure what I’d do with it. I wonder how strong the black bean flavor is. It sounds really cool! I’d definitely give it a shot 🙂
