The Hidden Falls We Never Found {Food & Fitness Link-Up}


This weekend, I crossed another LOST Virtual Running Series Station off the list!

Rob and I went on another one of my favorite dates – a long walk. Only this time, it was more like a hike!

A friend recommended that we check out Hidden Falls Park along the Mississippi River, on the St. Paul side.

I actually forgot about wanting to complete the LOST Tempest Station 9k. I ended up starting my MapMyRun app after we turned around so that I’d know how much I’d have to add on when we reached our starting point before heading in the other direction. That means…

But we encountered a few things had me thinking that if we were LOST characters, they might make us curious:

Only we weren’t in the jungle.

We never did find the falls. But that’s okay. It was a beautiful day and we enjoyed the walk and the extra effort we put in to hike and explore. Our reward?

046We happened on this place and soon found out that it was a University of Michigan bar! And the football game was about to begin. Have I mentioned that that is Rob’s Alma Mater?! He was in heaven.

We ordered the Smoked Pulled Pork Nachos with double meat to split. They were in no way gourmet, but pretty good! Everything else that came out of the kitchen looked like your basic bar food without much character. The 40 beers on tap were varied; but there weren’t many that wooed us.

We couldn’t stay for the entire game, but it was a nice ending to a great walk. The fact that there are Michigan alumni watching games there may be the reason that we go back to the Rail Station Bar & Grille!

Now it’s time for the Food & Fitness Plan for the week:


Last week included a few #kitchenfails and more eating out that I’d like to admit. However, the workouts were pretty good!

Now this week is going to be a little strange…


  • Dinners
    • Monday – Monday Night Football! I have a sort of green-and-gold dish that should suit the evening: Crockpot Carnitas = pork loin in a crock pot with salsa verde. I found it here and just happened to have the ingredients on hand! Where’s the gold, you ask? Well, we’ll be topping it with cheddar cheese, of course! Go, Pack, Go!
    • Tuesday – I’m getting my hair done, so I’ll probably just make a couple of these Egg Rolls when I get home. Oooo… Or maybe a black bean burger! It’s been a while since I’ve had one of those. I love this brand/flavor that I get at Costco. Sometimes I put it on an Everything Bagel Thin with a slice of tomato and dollop of guac.
    •  Wednesday – Leftovers
    • Thursday – Sunday – Rob’s parents are in town from Michigan! We’ll be dining out, but I’ve also got the ingredients for this chili and these meatballs on hand.

    • I made some Green Curry Chicken on Sunday for myself for the week! Add that to my snacks of a piece of Dove Dark Chocolate, some almonds and either an applesauce or Chobani and we’re good!

LOST 8.15K {Food & Fitness Link-Up}


One of my favorite college professors once told our class that you can never do something again. You can do something similar; but you can never do it again. I believe, at the time, he was speaking of travel. But it can apply to pretty much any experience in life.

When Rob told me that he wanted to walk around the St. Anthony Main area of NE Minneapolis again, I was looking for it to it. Our walks exploring the city are my favorite dates with my husband. And since Joe created four more stations to the Get LOST in Running Virtual Race Series, my plan was to do the Looking Glass Station 8.15k.

But first, let’s see how I did with last week’s Food & Fitness Planning:


Last Week’s Food:

  • Dinners
    • Monday – Spicy Thai Basil Beef
      • I used Coconut Aminos in place of the fish sauce and onions in place of the bell peppers. It could have used a bit more spice. That’s a note to self for next time.
      • It was good, but not overly-the-top awesome. Maybe if I would have SEASONED IT ALREADY! 😉
      • Then I read Kat’s tip to always double the sauce, when she made a different Thai Beef with Basil Recipe. I may have to take that advice.
    • Tuesday – Pork Chops this way – most likely with green beans on the side.
      • We skipped this and ate leftover still hanging out from last week instead.
    •  Wednesday – Meatballs with Tomato Sauce –  Just like we made in class the week before! A Keeper!
    • Thursday – TBDTurkey and Black Bean Cabbage Bowl with Avocado Salsa <-–An awesome, must-try! 
      • I made it when I had the girls over for dinner.

After we had so much fun getting LOST in NE Minneapolis earlier this summer, Rob wanted to go again. It wasn’t the same, but it was absolutely wonderful to be walking around in the cool, fresh, fall air! We finished the LOST Looking Glass Station 8.15k, but without a care for time. As I brought running back into my fitness routine, my back started to hurt again. I decided to back off. I’ll be sticking to walking for a while.

103Instead, we took the opportunity to stop and smell the roses enjoy the views and take photos. It was a brisk, but gorgeous day. I was in an incredibly good mood! I skipped ahead, climbed up on benches and tree stumps and took photos of the beautiful fall colors.

We walked St. Anthony Main and then followed the lower trail just like we did the last time, climbing, hiking and avoiding obstacles. However, unlike last time, Rob didn’t find any Liberty Nickles…

We really do enjoy living so close to Minneapolis… and feeling like you can still enjoy nature on such an Urban Walk.

077But there was something strange I found as we rounded a block to make our way to the Bulldog NE for lunch:

The Bulldog NE was packed for the U of Minnesota Gopher football game, but we managed to find a seat at the bar. We split a lunch of some sliders and truffle tots. And I tried a new-to-me beer – a DOUBLE Black Ale, made by a local brewing company, Indeed. We just had to look it up online at Beer Advocate to learn more about it!

It was another great walking date day with my husband. It was truly a similar event to last time, but it definitely wasn’t the same. But I still loved every moment of it.

Mediterranean Pork Chops {Food & Fitness Link-Up}


I made two blog-post worthy meals out of last week’s

Food & Fitness Linkup!

I’ll be showcasing one today.

Mediterranean Pork ChopsMy plan for Tuesday was to make some sort of pork chops with pesto green beans or zucchini and onions with herbes de Provence.

I decided on the zucchini and onions because I had three zucchini in the fridge that needed to be used and also found some fresh mozzarella which I no longer had tomatoes {gasp!} to make a Caprese salad.

So I improvised.

Yes. Me. Little Miss Follow-the-Recipe played the thing by ear. This always makes me nervous because I’m not sure what I’ll do if Rob doesn’t like what I make. We already go out to eat too much and I fear that if I don’t make something fabulous, he’ll want to eat out more. {I’m trying to push it in the other direction for both our health and pocketbook’s sake!}

In any case, I knew that Melissa d’Arabian’s Sweet Vegetable Saute side is always a hit with Rob, so I wasn’t too worried there. However, the last time I made pork chops with a Tuscan herb rub, I over-seasoned the meat, which made them nearly inedible. We had to scrape off much of the seasoning. It was also an herb rub I hadn’t used before, so I wasn’t very familiar with it.

Tip: When trying out new spices, use a little less than you think. You can always add more later.

This time, I decided to use my absolute favorite herb blend ever – the Rosemary Herb Seasoning Mix by Pampered Chef. Unfortunately, this blend has been discontinued. I don’t know what I’ll do when I’m out. It’s what I like to use when I make popcorn my favorite way. If anyone has the exact blend for this seasoning, please send it my way. I’ve tried to look it up online and there are so many different variations or guesses. But I don’t want any other Italian Seasoning mix, I want THAT blend!

In any case, for these Mediterranean Pork Chops, you can use any of your favorite Italian Seasoning Blends, Herbes de Provence or fresh herbs of your choice. You are just gong to have to play around to find the right mix for you.

Mediterranean Pork Chops with Sautéed Zucchini and Onions

  • olive oil (I used garlic infused olive oil.)
  • onion
  • zucchini
  • Italian, Tuscan or Herbes de Provence seasoning (to taste)
  • 4 pork chops (approximately 1 lb)
  • 4 oz fresh mozzarella (sliced)


  • Pre-heat oven to 350 degrees.
  • Start chopping and cooking the Sautéed Zucchini and Onions by following this recipe. If you don’t like onions, you can skip or use yellow squash or bell peppers. It doesn’t matter how much you use of each veggie, just season with Herbes de Provence, salt and pepper to taste. The dish can hang out and sauté on low for as long as you making the rest of this dish.
  • I like to pound the pork chops thin if they aren’t already. Then, brush one side of the pork chops with olive oil and rub with Italian seasoning mix to taste. Since my first over-seasoning debacle, I tend to under-season now because I know I can add more later. Don’t forget to add salt if your seasoning mix does not contain any.
  • Lightly spray a pan (I used a grill pan) with cooking spray or olive oil and heat to medium-high.
  • Once hot, put the chops in the pan, seasoned-side down.
  • Brush the remaining side with the olive oil and rub with more Italian seasoning.
  • Sear the chops for 2 to 3 minutes on each side.
  • Transfer the chops to a baking sheet or pan.
  • Top with slices of fresh mozzarella.
  • Bake for 10 to 15 minutes until cooked through and mozzarella has melted.
  • Drizzle with a little good quality extra virgin olive oil and sprinkle with a little kosher or sea salt to finish.


So what’s up this week?

planningWe have a lot coming up this weekend, so I’m not planning my days out exactly. Instead, I know that we will be eating at home four of the days and will just cook one of the following on any given day.


  • Dinners:
  • Breakfasts – Peanut Butter Toast, Granola with Milk
  • Lunches – Leftovers and Snack Lunches (This week, Poorman’s Caprese, cantaloupe, a piece of dove dark chocolate, Chobani yogurt, and a Tbsp of cashews.)


A couple of weeks ago I mentioned that I stopped running because my back was starting to hurt again. I switched to walking. Last week, the plan was to increase my walking mileage by 10% of the previous week. So my goal last week was to walk just a total of 8 miles.

But I didn’t do it.

By the end of the week, I realized that I need a better plan. I need some more structure. A goal. Then I remembered that what I wanted to do is finish the LOST Virtual Races. Joe has added four more races to reflect the last Stations of the LOST Dharma Initiative. Originally, I wanted to do the Couch to 5k, get back to running those and then run the last 7k, 8.15k, 9k and 10k stations.

If I can’t run right now, it’s time to get back to fitness walking. So my plan is to finish these stations by walking them, but not at a leisurely pace. I need to push myself!

So on Sunday, I completed the LOST 7k – Staff Station!

I’ve completed the Get LOST in Running Virutal Race Series!

The number 42 is the last in the series of numbers on Hurley’s lottery ticket from the TV series LOST. The numbers reoccur often in the series…

Thus, it is the last race of the series. Or is it?! Joe, who has been running the Get LOST in Running Virtual Races {as well as sending out some pretty awesome medals after completing each station!} may be extending it. After all, there are ten Dharama Initiative Stations on The Island, not just six. 😉

In any case, here are my results of the first 5 stations I completed in accordance with my Walking Program:

Station 1 – the Arrow 4k and Station 2 – the Hydra 8k

Station 3 – the Swan 15k

Station 4 – the Flame 16k

Station 5 – the Pearl 23k

With Station 5 and Station 6, I split up the distances across many days to complete them. This “final” segment took me a while to finish. When it came to Station 6: The  Orchid 42k, I originally challenged myself to complete it while on vacation. Unfortunately, I only walked two of the days, completing only 15.3km on vacation.

But I don’t regret it. I stayed active. We rode bikes, paddle-boated, went swimming, walked the dogs… It was a summer family vacation of activity! When I returned home, I reconfigured my plan to complete and finish all 42k by yesterday (Sunday). Why?

Because I’ve been cleared to slowly get back into running again!

Which means, my Couch to 5k program begins today!


Here’s how I completed the LOST Station 6 – Orchid 42k:

Sun 6/30: – 7.65k – 1:13:10

photoThis was my first attempt to do a rigorous walk while on vacation. With the 42k, I was not counting leisurely walks or walking of the dogs. This had to be fitness walking only! While my app indicates that I walked 11.05km, the actual distance around the lake and back is 7.65km, as I mapped out online. That’s the distance I’m going with. NO cheating here!

Mon 7/1: – 7.65k – 1:15:03

photoI took another walk around the lake and back. This time, RunKeeper was a bit more accurate showing I walked 8.28km. I’m still sticking with 7.65km. After that walk, I ceased to do any major walks on vacation. When I returned home, with the weather heating up, I opted to do a run or two on the treadmill.


Mon 7/8: – 1.17k + 6.11k = 7.28k – 1:12:35

These photos may be deceiving. While I was doing my walk, I meant to increase my speed but instead hit STOP at just 1.17 km. However, I started my timer on my iPhone at the very beginning and kept it running through both that walk and what I walked after that (in miles, shown above).


Mon 7/10: – 10k – 1:40:22 10k

I walked a 10k! Hey, if I can walk a 10k, I can surely sign up for and run one down the line, can’t I? I must say that overall, it went really well, I was a little sore, but not as bad as the one time in my life I ran 6 miles. My only problem this time was that I didn’t drink enough water before heading out. And I didn’t bring any with me. Getting really thirsty and dizzy around km 8 is not a good idea! I was nauseous for two hours after the walk.

Sat 7/13 – 5.03k – 50:00

This was my last walk on the treadmill… But I was getting antsy to complete a 5k that day. So I did add a little bit of running in the mix here and there! The distance above is listed in miles.

Sun 7/14: –5k – ?

photo(1)Yesterday, I joined my friend Stacy and our Team Rainbow Bright to do the Color Run! I hadn’t intended on running the thing, but wanted to throw in a little bit of running here and there. Shawna encouraged us to run through the color! I completed my desire this year to do a Color Run. However, this event is not timed and I forgot to time it myself. So will you let me call it 50 minutes since it was a walk interrupted by a little bit of running?

Total Distance: 42.61km

Total Time: Approximately 7:01:10

LOST 23k- Pearl


I’ve already completed the first four stations of the Get LOST in Running Race Series, but instead of running, I’ve completed them according to my walking plan. Once I complete the entire series, I’m going to begin the Couch to 5k to slowly get back into running again as recommended by my doctor.

Here are a few things I’ve liked about this series:

  • The distances of each race were determined by the numbers that reoccur in the TV series LOST.
  • The Stations are named after Dharma Intiative Stations in the TV series.
  • There are no specific dates for the virtual races.
  • In keeping with the LOST theme, races should be run on trails or the beach. However, if this is not possible, the roads or a treadmill work just as well.
  • The races can be run, walked or even crawled, if they must!
  • Medals are distributed to those who register and complete each station.
  • A special series medal is offered to all of those who complete the series.
  • As the distances get bigger, they can be split in any way you would like and then combined.

For the Pearl Station 23k, I elected to break the distance up and use the total distance as a goal I wanted to complete before going on vacation. We all know that vacation is a a wonderful release, but that week before can be hectic trying to plan and get ready!

Here is how it went…

Mon 6/17: – 5k – 50:20

photo 2Notes: This was my normal 5k route. The RunKeeper was pretty accurate, but I’ll just count this one as an even 5k.


Wed 6/19 – 2.7 k -43.50

23kWedNotes: This one was a leisurely walk with a friend and our dogs.Yes, there is a discrepancy here. My GPS of my RunKeeper was not accurate. I mapped it when I got home and came up with the 2.7km.


Thurs 6/20 am walk- 1.28k – 12:41

23kNotes: At this point, I told myself that I needed to get serious. If I was actually going to split up the distances to make 23k, I not only had to try to get every little bit in whenever possible, but I’d also have to really push myself walking these things. No more leisure walks!


Thurs 6/20 pm walk – 5k – 47:42

photo 1Notes: Yes, I walked twice this day! This was my normal measured 5k route. Remember post-surgery when it took me about an hour to walk a 5k? I’ve come a long way!


Sun 6/23 – 5.15k – 56:15

photo 3Notes: This was my attempt to walk some nice trails that I hadn’t before. Boy were they hilly!


Tues 6/25 – 5.90k – 52:40

Getting LOST (And so can you.)


So yesterday I promised you a Wine Wednesday post… But it didn’t happen. First, I realized that I LOST my notes on the wines Jared and I tasted at our most recent wine dinner. 😦 {He has since promised to be my secretary from now on.} Then, after an extra long day {read: busy/hectic} at work, I spent the evening drinking the stuff with my friend Stacy who made last minute plans to come up and visit for the evening! Therefore, life trumps blog posting. I sure you all can understand. 😉

On Tuesday, I posted about a Walking Program I have put into place until I am cleared to run again after my back surgery. I needed something to keep me on a schedule and help show progress. And while this program provides the schedule of increasing the amount of time each week, it doesn’t really do anything to hold me accountable for how fast or how far I go.

That’s when I got LOST.

Thanks to Megan from I Run for Wine {Gotta love that!}, I learned about the Get LOST in Running virtual race series. It’s based on the TV series LOST! No Kidding! Do you know what a LOSTie I am?! I’ve been wanting to re-watch the series for ages!


I was intrigued by the race series because:

1) Each race is based and focused around a Dharma Initiative “Station” on the LOST island.

2) When you sign up for and complete each race, you receive a race medal with that station’s emblem!

3) Each race distance is based on Hurley’s winning lottery numbers that reoccur often in the series: 4 – 8 – 15 – 16 – 32 – 42.

4) Therefore the first race is 4k, the second is 8k, the third is 15k and so on…

5) As the distances get bigger, you can spread your “mileage” throughout the week.

6) There is no specific date to do the runs. You can sign up until spots are sold out!

7) They are meant to be beach and trail runs {I mean, they were on an island, duh!}, but you can do whatever you want.

8) There is a final medal for completing the entire series!

Despite the fact that I cannot currently run, I signed up anyway. I thought it would be a great way to increase my distances and track my progress. My current plan is to do one station per week. However, I am going to be flexible about that and listen to my body.

I even downloaded the soundtrack to Season 1 of LOST and listened to it on a few of my walks. It’s amazing how such music can just clear your head!

Station 1 – Hydra 4k

At the end of the second week of my walking schedule, when I was just starting to do more than a walk around the block, I decided to do my first LOST Virtual Race – Station 1 – Hydra 4k. My mom was in town, so we completed it together, just walking around my neighborhood.

I posted this to the Get LOST in Running! Facebook group and despite my slooooowww tpace for a running group, I got great support. I indicated that I would really love to run these, but I’m going to be walking to increase my back strength and show progress before I am cleared to run again. Joe, the series organizer, was highly encouraging. In fact, I’ve recently seen that he’s updated the informational part of the Get LOST in Running website:

Station 2 – Arrow 8k

Last week, my walking schedule had me doing 25-minute walks with a long walk at the end of the week. I decided to make the long walk my Station 2 – Arrow 8k Virtual Race. I mapped out an 8k that included Lake Calhoun and a bit of Lake of the Isles – two lakeswhich comprise the Minneapolis Chain of Lakes. {Hey, it’s the closest thing I’m going to get to a beach in Minneapolis!} I decided to go on a Sunday afternoon. Rob asked if he could join me! So, off we went.

Here’s the thing…

We actually got LOST!

I thought I had mapped out a good starting point. But with construction and crowds we ended up parking elsewhere. Then I couldn’t figure out where the trail that connected Lake Calhoun connected with Lake of the Isles. And Rob was fast. He kept me moving. As we neared the end, I decided we’d just do the 5k around the lake and I’d do the 8k another time.

But after a while, the crowds thinned, the lake seemed calmer… and we could no longer see across it. Something felt wrong. I checked my Google map on my phone. Somehow we got on the path and ended up on Lake of the Isles! We tried to follow the map to find a way back to Lake Calhoun and our original parking lot. We slowed down a bit. I was tired! This is the furthest I’ve walked in a long time. But we actually finished a full 8k just about a half mile shy of where we parked!


This week, I’m up to 30-minute walks during the week. We are also doing the Dog Day 5k again on Saturday! Of course, I won’t be running it this year, but we have another dog to walk anyway… 😉

The plan, right now, is to do the Station 3 – Swan 15k this Sunday, weather permitting. Rob said he wants to join me again. We mapped out doing three of the lakes in The Chain. It’ll be a long one… But now that I think about it, I’ve always wanted to measure how far I walk when I travel. I bet a 15k would be just about right for a day of sight-seeing.
